Flavor profile

Pacific Northwest truffles are mycorrhizally associated with Douglas fir (Pseudotsuga menziesii) and grow in the forest soils of Oregon and Washington, primarily the Willamette Valley and Coast Range. Oregon white truffle (T. oregonense, winter; T. gibbosum, spring) has a garlic-and-earth aroma with fruity, pineapple-like top notes when fully ripe — quite different from the sulfurous depth of French black truffle. The critical quality issue with Oregon truffles is harvest maturity: immature Oregon white truffles (commonly raked and sold early for economic reasons) have minimal aroma; fully ripe truffles (soft to the touch, strongly aromatic) are categorically different. Properly ripe Oregon white truffle is genuinely extraordinary — used in the same preparations as European truffles (shaved over eggs, pasta, risotto) and especially suited to butter infusions and light cream preparations. The Oregon Truffle Festival has elevated the culinary awareness of these truffles significantly since the early 2000s.
